Delicious Angel Food Aronia Berry Muffins

Preheat oven to 400 degrees

1)  Mix together one white Angel Food cake mix with one 15 oz. can of pumpkin.  
2)  Add one cup of butterscotch chips & one cup Aronia berries
3)  Spoon in cupcake papers in cupcake pan

Bake at 400 degrees for 22 minutes


Aronia Berry Recipes

Delicious Rhubarb Aronia Berry Pie

2-9 inch unbaked pastry shells
Mix two cups of Rhubarb with one cup of Aronia berries
Add one and a half cups of sugar, two tablespoons of flour and a pinch of salt
Mix above together
Empty into an unbaked pie crust
Top with an unbaked pie crust

Preheat oven to 400 degrees
Bake at 400 degrees for 15 minutes
Reduce to 350 degrees and bake for additional 50 minutes

Aronia Black Bean Chili

2 cups chicken broth
1 cup Aronia berries

1 Tablespoon olive oil
1 cup onion
1 Tablespoon fresh chopped garlic
2 teaspoons finely chopped jalapeno

2 cups chopped cooked turkey (leftover works great)
1 chopped red or green pepper
4 teaspoons chili powder
1 ½ teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon dried mustard
½ teaspoon dried oregano
4 cups chopped tomatoes
1 can (16 ounces) black beans
¼ cup chopped cilantro

Heat one cup of broth and pour over the Aronia berries in a small pan.   Set aside
In a 4 quart saucepan, sauté onion in olive oil 5 minutes; do not brown.
Add garlic and jalapeno; cook one minute
Add turkey, seasonings, tomatoes, and remaining broth.
Bring to a boil and reduce heat; simmer uncovered 5 minutes.
Stir in black beans, Aronia mixture, and cilantro.
Heat thoroughly. Garnish with tortillas, sour cream and cheese. 
Serves 8

Aronia Berry Jelly

3-1/2 cups berry juice
1/2 cup lemon juice
1 package of pectin
6 cups sugar

Wash aronia berries and cover them completely with water. You will want to simmer for about 15 minutes. Next you will strain the juices out of the pan. Pour the measured amount a pan that is enamel, or something like this. It has to be non-reactive. Finally, you will add the lemon juice and pectin and stir it slowly. Bring to a boil, and once boiling add the sugar, all the while stir slowly, bringing the mixture to a full rolling boil. Boil exactly two minutes no longer. Skim if needed and pour into previously cleaned jars and seal them.
Yields: 4 pints
